Job summary

The Culinary and Horticultural specialist of Boulder Crest Retreat Arizona is responsible to the Executive Director for the overall care and upkeep of the Lodge's central Kitchen and the Organic Garden.
In addition to performing various duties in and around the Lodge and the Retreat.
The position also requires specialist to perform a variety of skilled tasks in food preparation, cooking, and presentation.
To oversee maintenance subcontractors in the kitchen and garden areas and to keep the Lodge area in impeccable order.
This position also requires supervision of outside volunteer personnel using the kitchen and garden areas.

Summary of essential job functions

  • Provide superior service to our customers at all times and respond to all guests in a courteous, efficient manner.

  • Preparation of various hot and cold foods, such as cooking basic sauces, soups and vegetable dishes; butchering meats, poultry and fish.

  • Shopping for food.

  • Oversee any kitchen activities and volunteers.

  • Monitor all foods for quality of taste, texture, and appearance.

  • Observes infection control practices and food safety at all times.

  • Attend to day-to-day problems and needs concerning equipment and food supplies; detects and ensures disposition of spoiled or unattractive good, defective supplies/equipment, and/or other unusual conditions.

  • Maintain the upkeep and appearance of the Retreats organic gardens applying landscaping techniques including, but not limited to, pruning, fertilizing, planting, weeding, trimming, watering, mowing and cleaning.

  • Overseeing all kitchen and garden subcontractors and maintenance.

Minimum requirements

The Culinary and Horticultural specialist will have an education and professional background commensurate with this important position.
The culinary and horticultural specialist will typically have a high school or equivalent diploma and 1-5 years (plus) experience as a chef, typically preparing meals for roughly 40 people.
Additionally, the chef is required to maintain the fruit and vegetable garden and incorporate those items into the meal planning.
Knowledge of cooking, gardening, and kitchen duties with organization skills, time-management and interpersonal skills.
He/she should also be patient, detail-oriented and physically fit.
A driver's license and a good driving record are required to use the company vehicle and run occasional errands.

Physical Demands

While performing the duties of this job, the culinary and horticultural specialist is regularly required to sit, stand, walk, speak, and hear.
The position requires extensive cleaning and heavy lifting, so the employee must have sufficient dexterity to use all tools and supplies.
The employee must frequently lift and/or move up to 40 pounds.

Travel

The culinary and horticultural specialist must be able to travel to get back and forth to work and run errands in and around Sonoita (within 100 miles).

Work Environment

The work environment is a small, busy facility located in Sonoita, Arizona.
The noise level in the work environment is usually low to moderate.

Capabilities / qualities required

  • The culinary and horticultural specialist will be a subject matter expert in all things kitchen and garden.

  • Skills to use both kitchen and garden hand and power tools.

  • Will have the ability to make informed decisions and take direction/guidance from the Executive Director.

  • The culinary and horticultural specialist will be an expert at delivering quality service to customers.

  • Good Communicator.
    Must possess the ability to communicate (in the English language) effectively with customers, vendors, and other support staff.

  • Team player.
    Works well to get along with others both supervisors and peers.
